Freeze-Drying vs Traditional Drying

Traditional drying and freeze-drying share one goal: reducing moisture. The way they reach that goal, however, is very different.
Temperature and process
Traditional drying generally uses warm air over time. Freeze-drying freezes the food first and removes ice under vacuum at low temperature.
Texture and appearance
Warm-air drying often creates a chewy or dense texture. Freeze-dried food is usually light, porous and crisp, and often keeps more of its original shape.
Different methods, different uses
Neither method is automatically right for every product. The best choice depends on the food, the desired texture, storage goals and how the final product will be used.
For snacks, toppings, powders and ingredients that need quick rehydration, freeze-drying offers especially versatile possibilities.
