What Is Freeze-Drying?

Freeze-drying is a gentle preservation method that removes water from food at low temperatures. The food is first frozen, then placed under vacuum so the ice changes directly into vapour.
Why does it stay light and crunchy?
Because water leaves the frozen food without passing through a liquid stage, much of the original structure remains. The result is a dry, airy texture with concentrated flavour.
What can be freeze-dried?
The method is not limited to fruit. Vegetables, dairy products, meat, beverages and prepared meals can also be freeze-dried when the recipe and process are designed correctly.
